FOSSA CHEESE FAIR

Sogliano | 20, 27 November and 4 December 2022

Sogliano al Rubicone is the homeland of pit cheeses. A small, enchanting village in eastern Romagna al border with San Marino which stood out for the production of a particular cheese matured in ancient pits in the shape of a flask, dug directly in the sandstone rock to a depth of about three meters. This tradition was born in the Middle Ages: the farmers of Sogliano, at the end of spring, they came to the village to entrust their cheeses to the "pitchers" because they were there kept during the summer. They picked up their products in November, ready to be able to face the "lean" of the winter season.

Today the opening of the pits, fixed during the last weekend of November, it is celebrated by one of the most important events related to this particular technique of refining the cheese. A festival deeply felt by the Soglianese population, which has created his own cult circuit.

To celebrate the cheese of pit, the Consorzio Vini di Romagna has chosen an exceptional pairing: Romagna Albana Passito Docg, a jewel of Romagna and an extraordinary passito wine obtained from the homonymous vine. At each tasting station, the public it can match a glass of Albana Passito coming from a different one consortium company. The choice of Romagna Albana Passito Docg enhances one of the most precious pairings: the important aging of the cheese di Fossa di Sogliano Dop - with a strong taste, rich in herbaceous scents, savory and almost spicy - it masterfully accompanies the velvety sweetness of Albana Passito which releases, by contrast, notes of honey and dried fruit. A triumph of flavors for true connoisseurs, which is never cloying thanks to the natural acidity expressed from the albana grape.
