Novebolle, the Romagna Spumante Doc explained easy

The creation of NOVEBOLLE is in fact the culmination of a process capable of merging knowledge, creativity, communication and vision. And it has given life to a new concept of sparkling wine, contemporary yet rooted in history, innovative and, at the same time, strongly identifying.

A characteristic aspect of Romagna is the historic division between hill and plain viticulture. If Sangiovese grapes have traditionally been chosen for the former, the plain is certainly the realm of Trebbiano.

The diffusion of Trebbiano in the plains favors the harvesting of grapes suitable for the creation of young and vibrant wines, which the people of Romagna have always used as daily and drinkable whites. A tradition to which was added, between the end of the 19th century and the second half of the 1900s, a production of Trebbiano dedicated to the creation of Vermouth and distillates.


A LONG SPARKLING TRADITION

Few people know, however, that Trebbiano grapes were also used as a base for semi-sparkling and sparkling wines. The fact that it does not have particularly marked aromas and a good level of fixed acidity makes the typical variety of Romagna a perfect "base" for bubbles produced in Europe: the substantial exports to Germany, Austria and France demonstrate this.

In the early 1900s, the fame of sparkling wines from Romagna was undisputed. In the houses there was no toast that took place without local sparkling wines and, abroad, the awards rained down. Historical sources show that the «Champagne di Romagna» – Francesco Baldi's Champagne Sarna, produced in the Faentino area or La Tour Champagne, produced on the farm of the Torlonia princes in San Mauro Pascoli, just to name a few – received wide acclaim even beyond border.

This incredible sparkling wine history - which has fallen into the background and unfortunately almost forgotten after the great wars - is today, on the contrary, the source of an innovative rediscovery, which has led producers and Consorzio Vini di Romagna to give new impetus to local bubbles through the NOVEBOLLE project.


THE “NINE” BUBBLES

NOVE as «Novecento», the golden age of the sparkling wine from Romagna. NINE as new. NOVE like the hills of the "Nove Colli" cycling race that winds along the vineyards of Romagna. NOVEBOLLE was born from the 2019 harvest with a very clear idea: Romagna is a land of great sparkling wines and the pride of this know-how is rooted in the iconic vines of its land. Therefore NOVEBOLLE was born as a valorisation project: a collective brand capable of bringing together and making the DOC sparkling wine productions of Romagna immediately identifiable, giving strength and meaning to the relaunch of a renewed tradition.

THE CHARACTERISTICS

NOVEBOLLE has the ambition to bring together under a single brand – recognizable and immediately evident – ​​all the labels that each producer vinifies following the Romagna Spumante Doc specification.

A specification that speaks for itself: at the center of the production process are Trebbiano and Sangiovese, iconic varieties of the area, standard bearers of the plains and hills.

The grapes destined for NOVEBOLLE can be produced exclusively in the provinces of Forlì/Cesena, Ravenna and Rimini and, from a production point of view, both the second fermentation in an autoclave (Martinotti method - Charmat), and the refermentation in the bottle (Metodo Classico).
